Wazwan
Wazwan is a traditional multi-course meal from the region of Kashmir, India. It is a significant part of Kashmiri culture and is often served during weddings and special occasions. The meal typically consists of 36 dishes, showcasing a variety of flavors and cooking techniques, with an emphasis on meat, particularly lamb and chicken.
The preparation of Wazwan is an art form, usually overseen by a chef known as a Waza. Each dish is meticulously crafted, and the meal is served in a ceremonial manner, often on a large platter called a trami. Wazwan not only highlights the culinary heritage of Kashmir but also reflects the region's hospitality and communal spirit.
