Vin Jaune
Vin Jaune is a unique white wine produced in the Jura region of eastern France. It is made primarily from the Savagnin grape and is known for its distinctive nutty and oxidative flavors. The wine undergoes a long aging process, typically lasting at least six years, in oak barrels without topping them up, allowing a layer of yeast called "flor" to develop on the surface.
This aging method gives Vin Jaune its characteristic golden color and complex aroma profile, which includes notes of dried fruits, spices, and walnuts. It is often enjoyed with rich dishes, such as comté cheese or poultry, making it a versatile choice for food pairings.
