Tahchin
Tahchin is a traditional Persian rice dish that features a unique combination of saffron, yogurt, and chicken or lamb. The dish is known for its crispy golden crust, which is achieved by cooking the rice in a special way, often in a pot or oven. The base of the dish is typically made with basmati rice, which is layered with marinated meat and sometimes vegetables.
To prepare Tahchin, the rice is first partially cooked and then mixed with yogurt and saffron before being layered with the meat. The entire mixture is then cooked until the bottom forms a crunchy crust, while the inside remains soft and flavorful. Tahchin is often served at special occasions and is a beloved part of Persian cuisine.
