Pimientos de Padrón
Pimientos de Padrón are small green peppers originating from the Padrón region in Galicia, Spain. They are typically harvested when they are young and are known for their mild flavor, although occasionally, some can be surprisingly spicy. These peppers are usually around 2 to 4 inches long and have a glossy skin.
Traditionally, Pimientos de Padrón are sautéed in olive oil and sprinkled with sea salt before being served as a popular tapas dish. Their unique characteristic of varying heat levels has led to the saying, "Os pimientos de Padrón, uns pican e outros non," meaning "Some are hot, and some are not."
