Iwakuni-zushi
Iwakuni-zushi is a traditional type of sushi originating from Iwakuni, a city in Yamaguchi Prefecture, Japan. It is characterized by its unique preparation method, where rice is pressed into a rectangular shape and layered with various ingredients, including fresh fish, vegetables, and sometimes egg. This style of sushi is often served in a bento box and is known for its beautiful presentation.
Unlike the more common rolled sushi, Iwakuni-zushi is made using a technique called "oshizushi," which means "pressed sushi." The ingredients are arranged in a mold, pressed down, and then cut into bite-sized pieces. This method not only enhances the flavors but also creates an appealing visual display, making it a popular choice for special occasions.
