Comté is a French cheese made from unpasteurized cow's milk, primarily produced in the Jura region of eastern France. It is known for its firm texture and complex flavors, which can range from nutty to fruity, depending on the aging process. The cheese is typically aged for a minimum of four months, but some varieties can be aged for over a year.
The production of Comté follows strict regulations, including the use of milk from specific breeds of cows, such as the Montbéliarde and Simmental. It is a protected designation of origin (PDO) product, ensuring that only cheese made in designated areas can be labeled as Comté.
