Fatty acids are important building blocks of fats and oils found in our food and bodies. They are long chains of carbon atoms, often with hydrogen atoms attached, and can be classified as saturated or unsaturated. Saturated fatty acids, like those in butter and cheese, have no double bonds between carbon atoms, while unsaturated fatty acids, found in olive oil and fish, contain one or more double bonds.
These fatty acids play a crucial role in providing energy, supporting cell structure, and aiding in the absorption of vitamins. Our bodies can produce some fatty acids, but others, known as essential fatty acids, must be obtained from our diet, such as those found in nuts, seeds, and fish.
