Ripening
Ripening is the process by which fruits and vegetables mature and develop their flavor, color, and texture. This transformation is triggered by natural hormones, primarily ethylene, which is produced by the plant itself. During ripening, starches convert to sugars, acids decrease, and the fruit becomes softer and more palatable.
Different fruits ripen at varying rates and under specific conditions, such as temperature and humidity. For example, bananas and avocados continue to ripen after being harvested, while others, like strawberries, do not.
