Myoglobin
Myoglobin is a protein found in muscle tissues that plays a crucial role in storing and transporting oxygen. It is similar to hemoglobin, the protein in red blood cells, but myoglobin is specifically adapted for muscle cells. This protein binds oxygen molecules, allowing muscles to have a readily available supply of oxygen during physical activity.
Myoglobin is particularly important for endurance activities, as it helps muscles maintain energy levels during prolonged exertion. The presence of myoglobin gives muscle tissue its red color, which is why darker meats, like beef, have a higher myoglobin content compared to lighter meats, such as chicken.
