Chalazae are two spiral strands of protein found in the egg of a chicken. They anchor the yolk in the center of the egg white, helping to keep it stable. This structure is important for protecting the embryo during development, as it prevents the yolk from moving around too much.
These protein strands are visible when you crack open an egg. They appear as white, twisted cords on either side of the yolk. While chalazae are often considered a sign of freshness, they are completely edible and do not affect the taste or quality of the egg.
