Sabzeh
Sabzeh is a traditional Persian dish made from sprouted grains, typically wheat, barley, or lentils. It is an essential part of the Nowruz celebration, marking the Persian New Year. The green sprouts symbolize rebirth and the arrival of spring, reflecting the themes of renewal and growth.
During Nowruz, families prepare a special table called Haft-Seen, where Sabzeh is displayed alongside other symbolic items. The dish is often served as a side or garnish, adding a fresh and vibrant touch to the festive meal. Its preparation involves soaking the grains, allowing them to sprout, and then growing them in a shallow dish.
