Ice Wine
Ice Wine is a type of dessert wine produced from grapes that have been frozen while still on the vine. This unique process occurs in regions with cold climates, where temperatures drop to at least -7°C (19°F). The freezing concentrates the sugars and flavors in the grapes, resulting in a sweet and rich wine.
To make Ice Wine, winemakers harvest the frozen grapes and press them immediately, extracting a small amount of highly concentrated juice. The fermentation process is slow, allowing the wine to develop complex flavors. Popular varieties of grapes used include Riesling and Cabernet Franc.
